How is it Different?
It requires no external heat, as it is all self-contained and sits right on the grate of your grill and works just like a top end smoker. Smoker tubes and chip boxes require external heat. Smoker tubes apply a hint of smoke flavor and cannot infuse the meat with flavor like a real smoker and provides little to no heat. Chip boxes require you to soak your chips in order to smoke otherwise the chips burn quickly and cause flareups!!
Why is Soaking Chips Bad?
When you soak your chips the water turns brown and you dump that out...whoops that brown water was your flavor and you just dumped it out!! It is the mini homemade version of how liquid smoke is made - soaking chips in water to extract the flavor and enzymes. Professional liquid smoke is made by burning wood and collecting the steam. Same process on a different level removing the flavor and leaving behind unflavorful chips when dried out will burn.
